A lot of it is a matter of preference, but there are a few aspects to note. PonyXL is completely trained from nothing, it's not a merge of the basic SDXL model, and has different capabilities. SDXL prompts are supposed to be written in natural language, whereas PonyXL uses booru-style tagging. There are also many style LoRAs for PonyXL that make it easy to experiment.
