Where is sageattention specified in this workflow? My understanding was that it had to be explicitly set to be used

WRONG- if you load comfyUI with Sage on, it is on for workflows that can use it.

As blobby said you can load comyUI with Sage on.
In the .bat file add --use-sage-attention
